Kidì - Barolo Docg

If your passion is growing grapes and making wine and you happen to be born and raised in the Langhe area, well, making Barolo is for sure your greatest aspiration.

So this is what happened to us and the wait to get to this moment has brought our love for our land to grow bigger and deeper.

Kidì is a word we made up but not randomly. The sound of it recalls a specific word from our Piedmontese dialect which means “looked after” and it’s exactly what we do with our Barolo.

We follow religiously every step of the production since we are aware that the land gives us an incredible fruit but that only man can turn it into one of the noblest wine on heart.

Knowing this, our work in the vineyard is meticulous and frequent and each row is neatly combed and grassy. It’s exactly how our grandfathers thought us to do it.

The vinification follows the tradition with the must being in contact with the skins for about 25/30 days. We use the “submerged cap maceration” technique to increase the days of maceration, passed the alcoholic fermentation, and to optimise the extraction of phenolic compounds.

The wine then ages in traditional large Slavonian oak casks ( 10 hl ) for about 36 months.

The bouquet of our Barolo is impressively complex with long lasting, fine and mature tannins which give to the wine an impressive silky texture.


Tasting notes

COLOUR:

light ruby with garnet and orange hues.

AROMA:

intense, complex and balsamic.

TASTE:

full, robust, velvety and long lasting.

FOOD PAIRING:

the big structure of this wine makes it a perfect pairing with all Piedmontese dishes, game, semi-matured and matured cheeses.

HARVEST:

manual with collection in small perforated crates.

VINIFICATION:

destalking and soft pressing. fermentation in temperature-controlled stainless steel vats. Submerged cap maceration for 25/30 days.

AGEING:

minimum of 36 months in Slavonian oak casks (1000 l).
